Recipe Exchange

Hi there! I thought it wld be fun to share some good, healthy and simple recipes in an effort to bring variety to our tables. Here's one of mine that's easy and delicious.

PASTA W/ BROCCOLI, GARLIC & OIL

1 LB SPAGHETTI
1 BUNCH BROCCOLI, CHOPPED
8 CLOVES GARLIC, SLICED
OLIVE OIL
FRESH GROUND PEPPER
GRATED PARMESAN CHEESE

FILL A LARGE POT (3/4 FULL) W/ WATER. BRING TO A BOIL. CHOP BROCOLLI AND ADD TO WATER. COOK AT A LOW BOIL FOR 10 MINS. REMOVE BROCCOLI AND SET ASIDE. IN SAME WATER, ADD PASTA, AND BOIL UNTIL DONE. WHILE PASTA IS COOKING, SLICE GARLIC AND PLACE IN A SMALL PAN W/ OIL. USE JUST ENOUGH OIL TO COAT PASTA. SAUTE GARLIC UNTIL SOFT. DRAIN PASTA, THEN COMBINE IN POT W/ BROCCOLI, GARLIC AND OIL. TOP W/ FRESH GROUND PEPPER AND GRATED PARMESAN CHEESE.

I like your pasta recipe because it is simple. I make the simple but delicious dishes over and over again. I will make it this weekend and tell you how we liked it. I have a few easy recipes, but here is just one:

Combine sour cream, powdered sugar and a bit of Grand Marnier - mix. Serve over fresh fruit of your choice. Sometimes I add small squares of pound cake.

I have a very easy ceviche recipe if anyone is interested too.

Tomato mozzarella salad. I’m sure everyone has heard of this, but this is one of my favorites. Fresh heirloom tomatoes large diced. Fresh mozzarella ball diced up and in with the tomatoes. Balsamic vinegar and olive oil to coat. Crush peppercorns and sprinkle in, and then fresh basil. Stir so everything is coated and mixed well, and then chill in the fridge. I have been told this is great the next day, but it never lasts that long.

Last night's dinner:
cooked rice
green salad
cooked broccoli
pineapple chicken (below)
1/4 c barbecue sauce
1/4 c orange juice
2 T brown sugar
1 T canola oil
1 T flour
a little salt or soy sauce

stir the above together and heat for about 2 min.
add
2 c diced cooked chicken
1 small can pineapple chunks (drained)
1/2 can sliced water chestnuts (drained) or 1 oz. slivered almonds
heat for another 10 min. pay attention, it could burn.
The sauce is sweet, it adds about 15 g of sugar per serving even without counting the pineapple, so I'm going to try it next time with just a teaspoon of brown sugar.

I read my recipe again and noticed I forgot vanilla.

Sour Cream
Vanilla
Powdered sugar
Grand Marnier

Yummmy desert sauce!

Ceveche (without raw fish)
popcorn shrimp
immitation crab
cilantro
green onions
avacado
dice up all ingredience, place in a bowl, cover with fresh lemon juice and serve with tortilla chips.... Yummy Too!
